Chocolate hummus "thasmere"!
Ingredients
500g boiled chickpeas, with ¼ cup of the water they were boiled in ⅔ cup tahini, preferably whole-grain 4 tbs. cocoa powder 3 tbs. honey [tbs. = tablespoon 1 cup = 250ml]
Optional
For a more aromatic and “multidimensional” spread, you can add spices like ground cinnamon, clover, ginger, and cardamom (<— it really lifts it up!). With a tablespoonful of hazelnut butter “thasmere” really resembles a traditional praline spread! If you want your chocolate hummus to be really smooth, peel the chickpeas before pureing them - or have your kid do it for you ;-)
Preparation
Put all the ingredients in a food processor and begin to process. Add the chickpea liquid as needed to allow the machine to produce a smooth puree. Then, taste and adjust the flavor with spices and/or hazelnut butter.
Store in the refrigerator in a jar for up to 5 days.
It’s yummy as a chocolate spread on hot bread or even as a dip for crispy fruit! It can also be a great filling for crêpes!

Our team does cooking workshops at schools and kindergartens, on a regular basis or as an one-off event. Our regular workshops take place in Attica, whereas once-off events can be arranged for groups of children, at schools or other related organizations, anywhere in Greece. What we are all about
“kids in the kitchen!”, created in 2012, was an initiative of Aspasia Provou, Certified Holistic Health Coach. It is targeted at every schoolchild in Greece, as, according to evidence, obesity and type II diabetes do not discriminate based on age, sex, or income level. She aspires to create meaningful change in the Greek society within the next few years. She has built a team of educators and scientists that designs educational programs (cooking workshops, videos, mobile apps, educational and inspiring speeches, articles, etc.) targeting young children and their parents and teachers.
Surprising though as it may seem for a country whose traditional cuisine is at the heart of the Mediterranean diet, a country famous for the longevity of its island people, like those of Ikaria, Greece tops a list of very disturbing statistics related to childhood obesity:

44% of Greek schoolboys and 38% of schoolgirls are overweight and obese, the highest rate in the world! (Organization of Economic Cooperation and Development – OECD, 2014).

Almost 24% of 7-year-olds and 30.5% of 9-year-olds are obese; almost 49% of 7-year-olds and more than 57% of 9-year-olds are overweight (World Health Organization – WHO, 2014).
- 30% of children are already overweight or obese by age 8; the percentage grows to 50% if all children aged 7-12 are included (HYDRIA, 2015).
These trends have only been exacerbated by the financial crisis. Public funding for health and education has been cut drastically since 2009, leaving both systems with very limited resources to act on the problem. (OECD, Changes in Health Spending, 2015). Citizens, therefore, have little support in understanding and reacting to nutrition-based health problems. As a result, the population is challenged by cardiovascular disease, type II diabetes, and metabolic syndromes that feed one another. This epidemic is taking place at a time when Greek society is consumed by economic distress, which also leads to affordable, yet low quality and highly processed food choices.
Led by a passion for serving nutritious meals to her own family, Aspasia began developing and conducting cooking workshops for children in 2012, as a part-time activity, on a voluntary basis. Through this process, she learned a great deal about the impact of food on children, and the importance of having real hearty meals cooked at home. The experience strengthened her resolve to make a positive change in children’s lives, and her passion evolved into a mission to help all children understand the importance of food and balance in every aspect of life so that they can grow up as physically, intellectually, and emotionally healthy individuals.
Aspasia graduated from the American Farm School of Thessaloniki, studied Business Administration (American College of Thessaloniki), Marketing (University of Sheffield), Theater (Entropia Studio and Oklahoma University) and Integrative Nutrition (Institute for Integrative Nutrition). She has also attended numerous seminars on cooking, nutrition and she has been trained on Agile Learning and Gentle Bioenergetics.
Since 2012, combining two of her “loves”, children and food, she created, and has been leading, the cooking workshops for children “kids in the kitchen!”. To design them she collaborates with an amazing team of: two education “gurus”, two chefs, a pediatrician, a General Practitioner and diabetes expert, and a food technologist.
As a Holistic Health Coach, Aspasia works primarily with parents who want to bring sustainable improvement to their life through a process that invites them to listen to their inner wisdom, to redefine their values and transform their goals into actions.
Aspasia has given National and Local TV and Radio interviews regarding entrepreneurship, cooking and holistic health coaching. Her work has also been presented in the press and at business events.
